Veggie-happy wraps

One of my favorite meals on-the-go: colorful vegetable wraps which you can fill with pretty much anything you fancy – vegan cheese, tofu, veggies etc.

They are an excellent zero-carb bread replacement whether you’re gluten-intolerant like me or whether you are trying to restrict your carbs intake.


2 cups chopped fresh vegetables of choice (i chose red pepper)

1 cup water

1 tbsp psyllium husk

Seasoning of choice – I opted for paprika and black pepper


1. Blend all ingredients

2. Spread batter onto dehydrator tray (use a baking sheet rather than wax paper) – keep the batter thick (do not thinly spread it)

3. Dehydrate for 8 hours at 125’F
