Cookie-Jar-Yum

Ingredient

“Cookie crust”

1 cup almond milk

2 tbsp oats

1 tbsp chia

1 tbsp cacao nibs

2 tbsp coconut flour

Chocolate cream layer

3/4 can coconut milk

1.5 tbsp maple

1 tbsp cacao

1/2 tsp raw vanilla

Vanilla cream layer

1/4 can coconut milk (remaining)

2 tsp maple

1 tsp raw vanilla

Topping

Cacao nibs

Goji

Coconut chips

Method

1. Prepare your cookie crust and separate into 2 portions; let it set for few hours.

2. Place one of the cookie crust portions in a jar after it has set and absorbed the almond milk.

3. Prepare your chocolate layer by whisking the coconut milk until it thickens. Add the other ingredients and keep whisking.

4. Pour on top of the cookie crust layer.

5. Let it set in the fridge.

6. Prepare the vanilla layer following the same instructions as the chocolate layer.

7. Then pour on top of the chocolate layer.

8. Add the remaining portion of cookie crust.

9. Top with goji, cacao nibs & coconut chips.
