Gourmet avo-pesto

A colorful healthy meal option with a fancy gourmet twist!

I’m a fan of tricolor protein pasta – they’re made of chickpeas, red lentils and green peas! A great plantbased source of protein.

I made a big batch of this refreshing pesto with a twist which is definitely a keeper!


2 ripe avocados

1/2 cup fresh basil

1/4 cup pine nuts

2 tbsp olive oil (you can skip this and add water instead to thin the dressing)

2 tbsp lemon

1 tsp onion powder

1 tsp garlic powder (optional)

1 tsp nutritional yeast

Sea salt and black pepper

Simply blend all ingredients & enjoy!
