Basic 5-min raw cookies

For this recipe start by making almond milk in order to use the residues (almond pulp) to make the cookies.

Step 1 – Almond milk

1 cup soaked almonds

3 cups water

Method

  1. Blend the almonds and water.
  2. Strain through nut milk bag.
  3. Store the milk in a glass container for up to 3 days.
  4. Use the almond pulp (residue in the nut milk bag) to make the cookies.

 

Step 2 – Cookies

1 cup moist almond pulp

1 cup almond butter

¾ cup oat flour

1 tsp raw vanilla extract

Pinch of cinnamon and nutmeg

Handful of chocolate chips

Method

  1. Mix all ingredients in a bowl.
  2. Shape into cookies.
  3. Store in the refrigerator for up to 1 week.
