For this recipe start by making almond milk in order to use the residues (almond pulp) to make the cookies.
Step 1 – Almond milk
1 cup soaked almonds
3 cups water
Method
- Blend the almonds and water.
- Strain through nut milk bag.
- Store the milk in a glass container for up to 3 days.
- Use the almond pulp (residue in the nut milk bag) to make the cookies.
Step 2 – Cookies
1 cup moist almond pulp
1 cup almond butter
¾ cup oat flour
1 tsp raw vanilla extract
Pinch of cinnamon and nutmeg
Handful of chocolate chips
Method
- Mix all ingredients in a bowl.
- Shape into cookies.
- Store in the refrigerator for up to 1 week.
