Blueberry Breakfast Bake

Ingredients

Dry

1 cup almond meal

1/2 cup oat flour  1/4 cup coconut flour

1/2 cup unsweetened shredded coconut

4 tbsp date syrup

1 tsp baking powder 1/2 tsp baking soda

1 tsp cinnamon  1/2 tsp sea salt

Wet

3 tbsp flax + 1/3 cup warm water

1/4 cup  light coconut milk or nut milk

1 cup fresh blueberries

1 tbsp melted coconut oil, melted and slightly cooled

2 tsp vanilla

 

Method

  1. Mix together the flax and warm water in a small bowl and set aside to let it thicken.
  2. In a large bowl, mix together the dry ingredients.
  3. If the flax eggs have thickened, whisk it together with the wet ingredients in a separate bowl.
  4. Mix together your wet and dry ingredients, keeping the blueberries as the last ingredient.
  5. Bake for approximately 20 minutes.  Let cool for at least 20 minutes before serving.
