Ingredients
Dry
1 cup almond meal
1/2 cup oat flour 1/4 cup coconut flour
1/2 cup unsweetened shredded coconut
4 tbsp date syrup
1 tsp baking powder 1/2 tsp baking soda
1 tsp cinnamon 1/2 tsp sea salt
Wet
3 tbsp flax + 1/3 cup warm water
1/4 cup light coconut milk or nut milk
1 cup fresh blueberries
1 tbsp melted coconut oil, melted and slightly cooled
2 tsp vanilla
Method
- Mix together the flax and warm water in a small bowl and set aside to let it thicken.
- In a large bowl, mix together the dry ingredients.
- If the flax eggs have thickened, whisk it together with the wet ingredients in a separate bowl.
- Mix together your wet and dry ingredients, keeping the blueberries as the last ingredient.
- Bake for approximately 20 minutes. Let cool for at least 20 minutes before serving.
